In this week’s podcast, we discuss various types of sugar and determine if any of them are healthier than the others. The sugars we chose to look at were: white table sugar, brown sugar, agave sugar and coconut sugar.
The process of extracting sugar from these plants is similar no matter the starting material. It usually involves boiling down the root or leaves and extracting the sugar crystals.
The main difference with these sugars is their glycemic index (GI). The glycemic index is a measure of how a particular carbohydrate effects blood sugar. The higher the GI value, the higher that particular carb will raise your blood sugar. Out of these sugars, agave has the lowest GI score of 17 and brown sugar had the highest with a score of 64. However, GI isn’t the best way to measure the quality of a sugar. Sugars with the lowest GI score contain the most fructose which is the hardest on the liver and can lead to non-alcoholic fatty liver disease.
