Carnosine is a dipeptide made from the amino acids alanine and histidine. It has the ability to bind to sugars in the blood and reduce the amount of glycation that occurs in our body. It also has the ability to form adducts with various toxic compounds in our body like acrolein and methylglyoxal. These properties of carnosine give us the ability to stay younger for longer and gives our body the capacity to heal from the damage that we accrue as we age.
